Simple 30-Minute Dinners for Active Weeknights

1. Vegetable Fried Rice  

Ready in: 20 minutes  

Why it’s great: Uses leftover rice, is full of veggies, and is a one-pan meal  

Ingredients:  

 Cooked rice (1-2 cups)  

Chopped vegetables (carrot, beans, capsicum, cabbage)  

Soy sauce, salt, pepper, garlic  

How to make:  

Sauté garlic in oil, add veggies, and then mix in soy sauce and seasoning. Add rice and stir well. Done!  

Pro tip: Add paneer or egg for extra protein.

2. Masala Pasta (Indian Style)  

Ready in: 25 minutes  

Why it’s great: Kid-friendly, spicy, and comforting  

Ingredients:  Pasta of your choice  

Onion, tomato, capsicum  

Garlic, chili flakes, garam masala, turmeric, ketchup  

How to make:  

Boil the pasta. Sauté the onion, tomato, garlic, and capsicum. Add the spices and ketchup. Mix in the pasta. That’s it!

3. Paneer Bhurji with Rotis  

Ready in: 20 minutes  

Why it’s great: High in protein, perfect with rotis or bread  

Ingredients:  

Crumble paneer  

Onion, tomato, green chillies  

Spices (turmeric, chilli, garam masala)  

How to make:  

Fry onion and tomato with spices. Add crumbled paneer. Mix well and cook for 5 to 7 minutes.  

Optional: Add capsicum for crunch.

4. One-Pot Dal Khichdi  

Ready in: 30 minutes  

Why it’s great: Comforting, light, and very filling  

Ingredients:  

Rice and moong dal  

Cumin, ginger, turmeric, salt  

Ghee and optional veggies (carrot, beans)  

How to make:  

Pressure cook rice and dal with spices and vegetables. Add ghee and coriander before serving.  

Pairs with: Pickle, curd, or papad.

5. Besan Chilla (Savory Gram Flour Pancakes)  

Ready in: 15–20 minutes  

Why it’s great: Gluten-free, good for light dinners or snacks  

Ingredients:  

- Besan (gram flour)  

- Onion, tomato, coriander  

- Spices like ajwain, turmeric, chili powder  

How to make:  

Mix everything with water to form a batter. Pour it on a hot tawa and cook like a dosa. Serve with chutney.

6. Egg Curry with Rice  

Ready in: 25–30 minutes

Ingredients:  

- Boiled eggs  

- Onion, tomato, garlic, ginger  

- Curry spices (turmeric, red chili, garam masala)  

How to make:  

Prepare an onion-tomato masala base. Add spices and water. Drop in the boiled eggs. Simmer for 5 minutes.

Why it’s great: Affordable, loved by everyone  

Ingredients:  

- Potatoes, onion, tomato  

- Spices like cumin, turmeric, garam masala  

How to make:  

Boil or fry the potatoes, then sauté with the onion-tomato masala. Add water for gravy or keep it dry.  

Bonus: Add peas for variety.

Ready in: 20 minutes  

Why it’s great: A great low-carb dinner  

Ingredients:  

- Tofu or paneer cubes  

- Bell peppers, carrots, beans  

- Soy sauce, garlic, black pepper  

How to make:  

Stir-fry everything in a pan until golden. Season well. That’s it!

9. Anda Bhurji Pav (Indian Scrambled Eggs)

Why it’s great: Super quick and bursting with flavor  

Ingredients:  

- Eggs, onion, tomato, chillies  

- Spices like turmeric and pav bhaji masala  

How to make:  

Whisk the eggs and cook them with the sautéed masala. Toast the pav with a bit of butter and serve it hot.

Why it’s great: No cooking required, super refreshing  

Ingredients:  

- Boiled chana (chickpeas)  

- Onion, cucumber, tomato

How to make:
